We use De Cecco and Pica pasta exclusively. Our cheek bacon comes from the Sano di Amatrice delicatessen and our Pecorino Romano is from Lazio DOP Fulvi which according to the Gambero Rosso (an authority on Italian food, wine and travel), “is one of the best around”.
